Australia Day
This Australia Day was a day of cooking, eating, friends and backyard cricket. We hosted dinner at our house and invited our good friends over. I made 9 pizzas and the dough from scratch and also made a chocolate taut and bail feta dip! I was exhausted after so much baking but I really enjoyed it. We had 3 different pizzas

Tandoori chicken with rocket and cream
My favourite pizza was the tandoori chicken cause its so amazing and slightly spicy and I love me some spice!
For dessert I made a Chocolate Taut with cream and frozen raspberries and my friend Erica made lamington macarons.
I had so much fun playing backyard cricket and I think I played pretty well considering I was in a dress! My dress is from my favourite local store in Bundaberg called Haight and Ashbury, my ring is from Samantha Wills and my earrings are my mothers.
Here is the recipe I use to make the pizza bases, it usually makes about 2 medium size pizzas. I usually double the recipe but this time I tripled it to cater for 14 people!
Amys Pizza Bases
375 ml warm water
2 tsp dried yeast
pinch caster sugar
4 cups plain flour
1 tsp salt
1/2 bottle dried rosemary leaves
1/4 cup olive oil
1 Mix yeast, water and sugar-sit for 5 minutes till frothy.
2 Mix flour, salt and rosemary- add yeast mixture and add oil.
3 Knead on a floured surface for 10 minutes till smooth and elastic.
4 Let rise in an oiled, covered bowl for 30 minutes.
5 Roll out and top with delicious toppings
6 Cook for 15-20 minutes at 180 degrees celsius.
Tandoori Chicken Pizza
*Makes enough for 1 pizza
125ml Philly light cream for cooking
1 tbsp tandoori paste
1 chicken fillet, thinly sliced
1 Amys pizza Bases (recipe above)
1 tbsp tomato paste
1 tbsp sweet chilli sauce
1/2 red onion, sliced
20g fresh rocket
1 Combine 2 tbsp Philly with tandoori paste then add chicken and marinate for 30 minutes in fridge.
2 Roll out the Pizza Dough on a floured surface to form an oval shaped base.
3 Combine tomato paste and sweet chilli sauce and spread evenly over base.
4 Top with onion and cooked tandoori chicken.
5 Bake pizza in fan forced oven at 180 degrees for 15 minutes.
6 top with rocket and spoon over dollops of Philly.
7 Enjoy your AMAZING pizza!
Chocolate Taut
300g dark chocolate
200g butter
2 tsp coffe
1 1/2 cup brown sugar
1 1/3 cup almond meal
6 eggs separated
1 Whisk egg whites.
2 Melt chocolate and butter in separate bowl to egg whites.
3 Add coffee, sugar and almond meal to melted chocolate and butter. Mix well.
4 Add egg yolks, 1 at a time.
5 Fold in egg whites.
6 Pour into greased and lined baking dishes and bake for 45 minutes at 180 degrees on fan forced oven.
7 Remove from oven, let cool for 15 minutes.
8 Remove from baking dishes and top with dollop cream and frozen berries.
