Easter Pancakes
Happy Easter
I decided to make some delicious pancakes for brunch and share the recipe.
They are dairy free, sugar free and made with spelt flour so they are more on the healthier side.
makes 6 medium pancakes
Ingredients
3 free range eggs
80 g Spelt flour
35 g Self raising flour
1 heaped teaspoon baking powder
140ml soy milk/almond milk
1 pinch of salt
optional: handful of berries
Whisk the egg whites with the salt in an electric mixer until stiff peaks form.
In another bowl mix the egg yolks, sifted flours, baking powder and dairy free milk.
Fold in the egg white mixture.
Cook on a medium heat in a non stick fry pan or with a little coconut oil.
Flip once and continue to cook until lightly browned on both sides.
Enjoy with yummy toppings of your choice.
Hope you enjoy them, I stacked mine up with fresh berries, slivered almonds, coconut yoghurt and lots of maple syrup, alongside a yummy soy cappuccino.
So nice to be home from college and be able to cook in my own kitchen.
